Japanese food "Miso Nikomi Udon" is a typical noodle dish of Aichi Prefecture. Unlike ordinary udon, it has a strong, unique chewy texture. At my previous job, I often worked with Muslims who came to Japan to work. While having meal with them, I found out that there was only one type of menu that Muslims could eat and learned the rule of Halal. Because I wanted my Muslim friends to be able to eat the meal that I offer, I took over the family business, Yamamotoya, 9 years ago and started offering Halal menu for 7 years. We have a sister restaurant, “Yamamotoya Sakuradori Otsu Branch” in Japan, and we are opening two branches in Hong Kong and one in Indonesia in 2024.
